Even tho’ it’s about 80 degrees outside right now… thermometer

 

this morning there was a chill in the air…

getting a little nippy!

and right about sundown, things cool off very quickly.

 

Autumn is approaching – The Autumnal Equinox is just around the corner! (September 22)

 

Gets me into the ‘baking‘ frame of mind.

 

Can’t wait to put something tasty in the oven – smelling the Cinnamon and other spices wafting through the air.

 

Famous Apple Coffee Cake Recipe

This recipe for Apple Cake is one of my very favorite coffee cakes to bake. Not sure where the recipe originally came from, but I’ve used it for many years.

 

Everybody loves this cake!

 

Perfect for breakfast, brunch, snack, dessert.

 

Serve it plain and it’s fabulous, or you can add a very simple Orange Glaze to sweeten it up just a bit.

 

Apple Coffee CakeApple Coffee Cake With Orange Glaze Recipe

Ingredients:

•    2 cups flour
•    1 1/2 cups sugar
•    2 teaspoons cinnamon
•    1/4 teaspoon allspice
•    1/8 teaspoon nutmeg
•    2 teaspoons baking soda
•    1 teaspoon coarse salt
•    1 cup applesauce
•    2 large eggs
•    1/4 cup brewed coffee
•    1 1/2 teaspoons vanilla extract
•    2 1/2 cups chopped apples (peeled or unpeeled)
•    1 cup nuts (or combo) or 1 cup raisins (or combo) or 1 cup cranberries (or combo)

Directions:

Sift dry ingredients together.
Combine remaining ingredients in a large mixing bowl; gradually add dry ingredients and mix well.

Pour into a greased bundt pan and bake in a preheated 350F oven for an hour or until the cake tester comes out clean.

Serves: 10-12

Very Simple Orange GlazeApple Coffee Cake with Orange Glaze Recipe

 

Ingredients:

1 cup confectioners’ sugar
1/4 – 1/2 teaspoon grated orange zest
3-4 TBS freshly squeezed orange juice, or as needed

 

Directions:

 

Grate an orange with a zester or grater.

Whisk together confectioners’ sugar with the orange zest and orange juice – in a little bowl until smooth.

Add either more confectioner’s sugar or orange juice to make the correct consistency for a pourable glaze.

Why I Have H-eggs in My Refrigerator

This is a funny story.

 

At least, I think it’s funny, especially since it didn’t happen to me.

 

I was just the witness.

Really. One of the funniest things I’ve ever seen – up close.

We were sitting down to breakfast one morning.
I was having the last of the cereal.

 

My sister decided to have a hard-boiled egg.

She set out her plate, juice, vitamins, utensils, napkin, newspaper, paper towel for the eggshells.

 

She reached into the plastic egg container in the refrigerator, took out an egg and came and sat down at the table.

Holding the egg in her hand, she smashed it down on the table to break the shell and……

 

And… what

 

Of course!

 

You may have guessed it!

 

SPLAT!

It wasn’t a hard-boiled egg at all!

 

It was just a plain old, regular non-cooked egg.

Smashed to bits on the kitchen table,
egg innards all over the place.

 

All over her.

 

The LOOK ON HER FACE! OMG!!!

 

Priceless. Words cannot describe.

 

I thought I was going to need to change my pajama pants…

Really, I tried to be sympathetic, but I couldn’t. I just lost it.

Laughing hysterically.

Eventually, she was laughing too. (Weeks, months, years later, we’re still laughing.)

 

You Need a System

So now, we have a system. When we hard-boil our eggs, after they have been cooked, given their ice bath and dried off, we mark them each with a little “H” on the top. “H” of course, is for Hard-boiled.Why I Have H-eggs in My Refrigerator

 

So as not to confuse them with regular, non-cooked eggs.

 

They are H-eggs.

Le Creuset Enameled Cast-Iron 7-1/4-Quart Round French Oven

It’s hard to justify the higher cost of the Le Creuset Dutch Ovens compared to other less-expensive brands. (The manufacturer calls them the French Ovens) But aficionados of the brand say they are worth every penny.

Besides the facts that the oven’s base, sides and lid are the same thickness to ensure even heat distribution, the Le Creuset Dutch (French) Oven browned meat with a golden crust.

The main advantage over the less expensive brands is durability.

Many owners are delighted that Le Creuset ovens last practically a lifetime, and there are no complaints of the enamel chipping.

Le Creuset’s ovens come in varied sizes in popular colors – it’s optional oval shape
also sets it apart from other manufacturers.

These ovens come with a limited lifetime warranty.

Lodge Enamel Dutch Oven Review

Lodge 6-Quart Color Enamel Dutch Oven

While at the opposite end of the price spectrum but receiving equally positive feedback in reviews are the Lodge brand Dutch Ovens.

Lodge Dutch Ovens cost hundreds of dollars less than the Le Creuset ovens, and yet the difference in user ratings is quite subtle.

Both get excellent reviews, but there were more complaints about chipping enamel for the Lodge versions.

Overall, the overwhelming majority of reviewers say the Lodge 6-Quart Enamel Dutch Oven is attractive, versatile and durable.

Despite this, most of the reviewers don’t see any major differences in cooking performance between the Lodge and the Le Creuset Dutch ovens,which cost four times as much.

There are however, aesthetic differences.

Le Creuset Dutch ovens come in a prettier, more diverse array of colors,while Lodge offers just four color choices (red, blue, green and brown).

Most Lodge Dutch Ovens get rave reviews from owners posting to Amazon. The Lodge 6-Quart Color Enamel Dutch Oven, for example, earns an average of 4.5 stars in nearly 550 reviews.

Owners are happy with their Le Creuset pots, with no reports of chipping as is the case with less expensive brands.

Le Creuset’s variety of sizes, colors and optional oval shape are also unmatched by cheaper brands. Le Creuset is dishwasher-safe, but the manufacturer recommends hand washing to prevent the finish from becoming dull.

If the Le Creuset Dutch Oven does not fit within your budget, all reviews recommend the Lodge 6-Quart Color Enamel Dutch Oven.

Cast Iron Dutch Oven Cooking

I love to cook for my big family – and one of my favorite ways of cooking in the kitchen (or even the great outdoors, although I don’t do too much of that these days!) is Cast Iron Dutch Oven Cooking.

Using a cast iron enameled dutch oven allows for uniform heating and faster cooking time (and tastes better than something cooked in a convection oven which is supposed to be “faster” cooking time).

What shall I cook in my Cast Iron Dutch Oven?

Just about anything can be made in a cast iron Dutch Oven – on top of the stove, in the oven or on top of your campfire or campstove – but here are a few a suggestions and a recipe for one of our very favorite recipes – Easy Homemade Stuffed Peppers.

6qt. Dutch Oven

2 cup liquid measure

Wire whisk

Paper towels

Easy Recipe for Stuffed Peppers

This easy recipe makes the best homemade stuffed peppers!

Prep. Time: about 20 minutes

Cook Time: about 60 minutes (or until peppers are fork tender)

 

Ingredients:

1 tsp. Olive oil

4 medium green peppers (or any color you prefer – yellow/red/orange)

1 pound extra lean hamburger (93/7)

1 small onion – chopped

1 clove garlic crushed (or 1 tsp of jar minced garlic)

1 cup of white rice cooked (you could use brown or wild rice if you prefer)

Lawry’s salt ( or store brand season salt) to taste – at least 1 tsp

Mrs. Dash’s Table Blend Seasoning – 1 tsp

1 – 10oz. can Campbell’s Tomato Soup

¾ cup of water

 

Instructions:

Using the teaspoon of oil and paper towel, coat inside – bottom and sides – of your Dutch Oven.

Whisk together condensed soup with ¾ cup of water and set aside.

Cut each pepper in half with your Chef’s knife (around the middle so you have 2 halves standing), scoop out the seed and excess green inside and trim any stem – rinse and let drip dry.

In large mixing bowl combine raw hamburger, crushed garlic, chopped onion, rice and seasoning and mix well after donning gloves (to keep your hands clean).

Fill each pepper half with meat mixture and distribute amongst the 8 halves.

Pour a small amount of soup into bottom of Dutch Oven.

Place pepper halves in a circle around the edge of pot and then in the middle – it may be a little tight but they will shrink as they cook.

Pour remaining soup over the tops of the stuffed peppers.

Cover pot and put on stove on High bringing the soup to a boil, then lower to simmer and cook for about an hour.

Makes 8 servings

 

 

Stuffed Peppers Pair Well With:

Pair stuffed peppers with mashed potatoes and steamed fresh green beans. Use the juices from the cooked peppers as a gravy!

Healthy Vegan Chocolate Chip Cookie Mix in a Mason Jar

 

A Cookie Mix present in a Mason Jar is a Traditional handmade Christmas gift in some circles, but this year, make your Cookies with a new Twist!

Make the cookies Vegan!!

This Vegan Chocolate Chip Cookie mix recipe is a delicious experience!

These cookies are Fabulous, and no one ever suspects that they’re vegan.

Perfect for those who are interested in avoiding animal products such as eggs and dairy.

It’s a great way to introduce someone to vegan baking, showing how them how delicious the results can be! Especially with vegan chocolate chips!

 

On with the Gift-making….

Cookie Mix in a Mason Jar

Layer your dry ingredients in a quart-sized Mason jar, tie directions to the jar. (listing the ingredients and cooking directions)

Be careful when you add the ingredients. Jostling it around too much will mix up the dry ingredients and will effect the pretty layers of ingredients. Decorate however you wish – painting with enamel paints, or a handmade label.

To make one gift jar you will need the following:

1 quart-sized mason jar
2c flour
2t baking powder
1/2t salt
1t cinnamon
generous 1/2c dried cranberries
1c sugar
generous 1/2c vegan dark chocolate chips
hole punch
gift tag big enough for the recipe and directions
yarn, ribbon, string, or twine

In a bowl, combine the flour, baking powder, salt, and cinnamon.
Pour this into the bottom of the mason jar, tap the jar on the counter until ingredients are level.

By packing the ingredients firmly and evenly, you maintain the colorful layers.

Add the dried cranberries, pressing them down gently.
Pour in the sugar, using a spoon to smooth the surface.
Add chocolate chips to the top.  Close off the top of the Mason jar.

To create a recipe card:

You just need some paper to create a recipe card. Recycled paper or cardboard is great for this. You can use an old cracker or cereal box or paper grocery bag. Cut a piece to 3″x5″, Punch a hole in the corner, so you can tie it to the jar/bag, and write out your recipe.

 

Recipe Card - Healthy vegan chocolate Chip Cookie Recipe

 

 

Healthy Vegan Chocolate Chip Cookies

2c flour
2t baking powder
1/2t salt
1t cinnamon
generous 1/2c dried cranberries
1c sugar
generous 1/2c vegan dark chocolate chips

Preheat the oven to 350 degrees.
Combine all of the ingredients from this jar in a large bowl, stirring well.
In a small bowl, combine: 1/2c vegetable oil, 1t vanilla extract, and 1/4c water.
Pour the wet ingredients into the dry. Mix until there are no lumps remaining.
Bake for 10-12 minutes, until the tops of the cookies are golden brown.
Yield: about 24 cookies

Use ribbon, twine, raffia or yarn to attach the recipe to the jar, and it’s a gift!

If you wish to make a smaller portion, you may cut the recipe in half and make pint-sized jars of mix!
