For the family Fourth of July Holiday outing, I decided to put my spin on one of the All-American Favorites, Apple Pie, by instead, baking up some delicious, easy apple hand pies, using the All American Apple Hand Pie Recipe below. You, too can learn how to make apple hand pies. It’s as easy as…

I know.

Pie.

Yes, of course, it’s great to eat a big ole piece of pie in the summer, but sometimes, you only want a little bite…or two, or three!

So, that’s why I opted to make individual apple hand pies for our barbeque,

and not

one

E-Nor-Mous apple pie.

 

Apple Hand Pies Are The Ideal Dessert

And, since there will be many children at the party, the hand pies seemed just the exact size for small hands!

Being amazingly portable, hand pies are the ideal dessert for taking on a summer picnic along with the potato salad, or enjoying at home in the backyard, lazing by the pool.

Hand pies are also a fabulous reason to be buying and eating lots of fresh fruit from the market. You can bake so many flavorful combinations with the fruits.

 

How To Make Apple Hand Pies With The Hand Pie Method

Most hand pie recipes are just regular, run-of-the-mill pie recipes.

The hand pie method is to slice the dough into small, round circles, then divide the pie filling into even portions, filling the rounds with the apple pie mixture.

If you don’t bake, or have the time to make your own pastry crust, then by all means, use 2 refrigerated 9-inch pie crusts for making the hand pies, just like the simple recipe below.

And now I present, an easy recipe for apple hand pies,

(an Easy Apple Hand Pie Recipe)

 

 First, Preheat the oven to 350° degrees F.

Line 2 baking sheets with crisp parchment paper. Then, combine 1/4 cup sugar, 1 Tbsp cornstarch, 1/2 tsp ground nutmeg, 1/4 tsp of allspice, 1 tsp cinnamon and 1/8 tsp salt in a bowl.
An Option: a touch of orange zest.

Next, add two peeled, diced apples, a splash of fresh lemon juice, 1/2 tsp of vanilla extract, then toss.

Unroll 2 refrigerated 9-inch pie crusts onto a generously floured surface. Cut out 3-inch rounds with cookie cutters. Re-roll scraps and then, cut out more rounds.

(Should make approx. 20 rounds)

Lightly brush each round with the beaten egg.

Place a large spoonful of apple pie filling into the center of half of the rounds.

Cut a small vent into the center of remaining rounds.

Cover the filling rounds with the vented rounds, sealing up the edges with a fork,
or create a more rustic look with your fingers.

Brush the tops with some more egg, then sprinkle with regular or coarse sugar.

Bake the hand pies on baking sheets until golden, about 20 minutes.

Kick it up a notch:

Add a tablespoon of Brandy or Bourbon to the apple hand pies filling!

It’s easy. Just follow these directions:

 

Classic Baked Potato Recipe

1. Preheat the oven to 375 degrees F.

2. Scrub 4 medium baking potatoes. (Russet is recommended)

3. Rub with a little healthy oil of your choice (Try Safflower Oil or Coconut Oil)
and place directly on an oven rack. (no pan necessary)

4. Bake approximately 1 hour or until soft.

5. Split open lengthwise and squeeze to push flesh out slightly.

6. Sprinkle with salt and pepper.

 

Voila!

 

That’s it.

Ground Beef cooked with garlic, shredded cheese, diced tomato

2. Smoked Salmon
Cream Cheese, chives, smoked salmon

3. Blue Cheese, Garlic and Herbs
Sour Cream, crumbled blue cheese, chopped garlic, fresh Rosemary

4. BLT
Butter, diced cooked bacon, chopped tomato, shredded lettuce

5. Greek   
Plain yogurt, chopped black olives, cucumber, tomato

6. Chili Cheese
Warmed chili, Mexican-blend shredded cheese, cilantro, chopped scallions

7. Spicy Chickpea
Drained canned chickpeas, sauteed with cumin, tumeric, garlic, Greek yogurt, chopped parsley

8. Sausage & Peppers
Italian sausage sauteed with bell peppers and onions, grated Parmesan cheese

9. Mexican
Ground Beef or Turkey mixed with Taco seasonings, shredded cheddar cheese, salsa, chopped cilantro

Pizza Sauce, grated mozzarella cheese, pepperoni slice, grated Parmesan cheese

 You can also “bake potatoes in the microwave, if you please.

How To Bake Potatoes in The Microwave Oven

Simply pierce 4 potatoes with a fork.

Place in a shallow baking dish.

Cook for 10-12 minutes, turning every 3 minutes.

Use a fork/skewer to check for doneness.

If needed, cook 1-2 more minutes.

I live on the South Coast of New England, in the greater Boston area. There are so many great restaurants in what I consider to be my “neighborhood”. So many interesting places to explore. And with the burgeoning film industry here, there are a lot of celebrities who live(d), work in and visit our historic state.

Hot Mocha Madness

One of Wahlberger’s signature (favorite) dessert drinks is Hot Mocha Madness, a hot chocolate drink with a real kick to it (Bailey’s and Kahlua). And, a special ingredient, Marshmallow Fluff, added by his mother, Alma.

Speaking of making hot chocolate in his childhood, he recalls the family using inexpensive powdered chocolate, however, he added,

 

“…Mom always made hot cocoa with Fluff.”

These days, the Wahlberger family, and the Wahlberger restaurants, use high quality-chocolate when making their favorite hot chocolate dessert drinks for the Winter  – and they’ve added some alcohol and spices to the recipe as well.

“The mocha flavor with Bailey‘s is a great combo…both those blend beautifully with Fluff. It’s not Winter without Fluff,” he said.

This hot chocolate recipe is also a sweet treat for kids, minus the alcohol, of course.

Ingredients:

4 cups milk

3 ounces unsweetened chocolate (We like Ghiradelli’s)

3/4 cup sugar

1/2 tsp. cinnamon

1/2 cup Kahlua

1/2 cup Bailey’s Irish Cream

Marshmallow Fluff for garnish

 

Directions:

1. Place milk, sugar, cinnamon and chocolate in a heavy-bottomed pan.

2. Stir and bring to a simmer.

3. Add the Kahlua and Bailey’s

4. Place in four mugs and top with a tablespoon of Marshmallow Fluff and drizzle of Bailey’s.

3 Scalloped Potatoes Recipes from Celebrity Chefs | Scalloped Potato Gratin Recipe

 

I’ve been reviewing some (3) Scalloped Potatoes Recipes from Celebrity Chefs,

as one of my food assignments for Christmas Eve dinner, (which is being hosted at my cousin’s house), is a potato side dish.

Hands down, I love scalloped potatoes for special dinners, like the Christmas Holidays!

 

 

Scalloped Potatoes

 

 

Here’s a a look at some scalloped potato recipes from some famous chefs.

 

 

Scalloped Potatoes Recipes from Celebrity Chefs

 

This is basic recipe for Scalloped Potatoes from Emeril Lagasse over at the Food Network:

Scalloped Potatoes Recipe

Serves:    4 servings

Ingredients:

1/4 cup chopped onion
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk
1 cup grated Cheddar cheese
Salt and pepper
3 potatoes, peeled and thinly sliced, not rinsed

Directions:

Preheat oven to 350 degrees F. Cook onion in butter in a large skillet until soft, add flour and cook for 2 minutes, whisking. Whisk in milk and cook until thick and bubbly. Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper.

Layer half of potatoes in a baking dish and sprinkle with salt and pepper. Cover with half of sauce. Layer remaining potato slices on top of sauce and season. Top with remaining sauce and sprinkle with remaining cheese.

Bake, covered, for 30 minutes or until potatoes are tender.

Sounds good to me…

 

 

This simple scalloped potatoes recipe,

times 4,

to make 12 servings should be enough…

And I’m going to use 3 different kinds of cheeses….sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced Provolone (which melts splendidly)

and I’ll most likely add a few more twists of my own. Maybe sprinkle with chives and bacon bits? Maybe cream instead of milk…fresh herbs…garlic…

 

 

Cooking can be so creative!

A Scalloped Potato Gratin Recipe courtesy of Tyler Florence, also of Food Network.

 

Scalloped Potato Gratin Recipe

Yield:    4 to 6 servings 

Ingredients:

1 1/2 cups heavy cream
1 sprig fresh thyme
2 garlic cloves, chopped
1/2 teaspoon ground nutmeg
Butter
2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
Salt and freshly ground black pepper
1/2 cup grated Parmesan, plus more for broiling

Directions:

Preheat the oven to 375 degrees F.

In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg.

While cream is heating up, butter a casserole dish. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers.

Bake, uncovered, for 45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes.

 

And, for you serious cheese lovers, this is a tasty recipe for Scalloped Potatoes with Three Cheeses from Rick Rodgers, cookbook author and teacher, and Bon Appetite:

 

Rick Rodgers says,

“I’ve always thought of mashed potatoes as an everyday way to serve potatoes, but scalloped potatoes really say special occasion to me.

Thanksgiving, Christmas, Easter—they all call for scalloped potatoes, not something as humble as mashed. And since I’ve never been one for bland food, I kept fiddling with the amount and types of cheeses until I got this full-flavored version. If you like it with turkey, wait until you try it with the Easter ham.”

Scalloped Potatoes with Three Cheeses Recipe

Ingredients:

3/4 cup (packed) grated extra-sharp cheddar cheese (about 4ounces)
3/4 cup crumbled Danish blue cheese (about 4 ounces)
1/3 cup (packed) freshly grated Parmesan (about 1 1/4 ounces)
4 pounds russet potatoes, peeled, cut into 1/4-inch-thick rounds
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 cup finely chopped onion
3 tablespoons all purpose flour
4 tablespoons (1/2 stick) butter
3 cups whole milk

Preparation:

Preheat oven to 400°F. Lightly butter 13x9x2-inch glass baking dish. Mix cheddar cheese, blue cheese and Parmesan in small mixing bowl.

Arrange half of potatoes in prepared baking dish, overlapping slightly. Sprinkle with teaspoon salt and 1/4 teaspoon pepper. Sprinkle onion over, then flour. Dot with 2 tablespoons butter.

Sprinkle half of cheese mixture over. Top with remaining potatoes, 3/4 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons butter. Reserve remaining cheese.

Bring milk to simmer in medium saucepan. Pour milk over potatoes (milk will not cover potatoes completely).

Cover baking dish tightly with foil. Bake 45 minutes. Uncover dish (liquids in dish may look curdled); sprinkle potatoes with reserved cheese mixture.

Bake uncovered until potatoes are tender and cheese is deep golden brown, about 45 minutes longer.

(Can be prepared 2 hours ahead. Let stand at room temperature. Cover and rewarm in 375°F oven about 20 minutes.) Remove from oven; let stand 15 minutes before serving.

Talula’s Table Scone Mix Recipe

Aimee Olexy, Talula’s Table and Talula’s Garden, PA

Makes 1 jar of Scone mix

 “Scones, when made well, it’s as if you’re having a revelation of texture and little pockets of flavor,” says Olexy. “They are a less-sweet version in the world of breakfast buns. You have to eat them off a plate; scones make you sit, chat, and enjoy your coffee.”

INGREDIENTS:
10 ounces (about 2 1/2 cups) all-purpose flour
1/2 cup sugar
1 teaspoon salt
1 tablespoon baking powder
1/2 cup chocolate chips
1/2 cup dried cherries

PREPARATION:
Mix the sugar, salt, flour and baking powder together and layer the mixture in a quart-sized mason jar with the chocolate chips and dried cherries.

Label the jar, and tie on a tag including the following instructions:

To Finish: Pour the contents of this jar into a large mixing bowl. Make a well in the center of the bowl and pour in 1 1/4 cups heavy cream. Mix until it’s combined. Form the dough into a large circle and flatten it out. Cut into 6 equal pieces (like a pie) and bake on parchment paper at 350 degrees for 16-20 minutes.
