In the hot summer weather (especially in July, National Ice Cream Month!), I like to experiment with different flavors for making homemade ice cream with one of my favorite small kitchen appliances, the Cuisinart Ice-21 electric ice cream maker.

Herbs and Mint and Ice Cream, Oh My!

I grow many herbs in my garden, peppermint (below) and spearmint are among them.

I like to use fresh herbs to freshen all of my cuisine creations, and they seem to pair exceptionally with ice cream.

 

Who knew exotic flavors of ice cream would be all the rage in the big cities…?

 

One of my favorite ice cream flavors is not particularly exotic, Homemade  Dark Chocolate Mint Ice Cream!

Homemade Dark Chocolate Mint Chip Ice Cream Recipe

 

 

Here’s a neat recipe for you to try:

 

Homemade Dark Chocolate Chip Ice Cream Recipe

1 can of coconut milk
1/4 cup raw honey
2 egg yolks
2 ounces 72% dark chocolate
4 – 5 drops of peppermint essential oil, or a teaspoon pure peppermint extract
2-3 drops of green food coloring (optional)

Place coconut milk and honey in a medium saucepan over low heat. Whisk until blended.  Add peppermint extract and optional food coloring.  Stir.

Whisk two egg yolks in a separate bowl. Temper the yolks by adding a small ladle of hot mixture, stirring continuously so as to not “cook” the eggs. Add a second ladle to egg mixture. Once combined, pour this back into the saucepan and stir everything together. Refrigerate until completely cooled.

Follow the directions on your electric ice-cream mixture as each one may be a little different. I put the freezing cavity in the freezer overnight and the ice-cream mixture in the refrigerator overnight and then blend in the morning for about 30 minutes.

Note:

Add the chocolate about halfway through the blending process.  You can use chocolate chips for this recipe.  We recommend these dark chocolate chips, allergen free, vegan, organic and non-GMO.

I Love My Cuisinart Griddler

 

Here’s our Small Kitchen Appliance Review of the Cuisinart GR-4N 5-in-1 Griddler, which we welcomed into our kitchen last week.

 

Out with the old, in with the new – Grill, that is.

 

I Love My Cuisinart GR-4N Griddler

 

 

We’re big fans of grilling meats, however, for quite some time we have had a George Foreman Grill – and even tho’ I loved cooking inside ‘on the grill’, cleaning off the darn thing was a huge pain.

 

We decided to try the Cuisinart Griddler this year, after having to clean off that GD GF grill one more (and LAST) time.

It’s small in size, but big in features:

 

Cuisinart’s countertop Griddler offers five-in-one functionality as a contact grill, panini press, full grill, full griddle, and half grill/half griddle.

 

 

What first attracted me to the Griddler was all of the different ways it could be used: as a griddle, as a grill, and as a panini press.

 

Perfect Size

 

And, I love the size.

I love the size (great for just 2 people) and also creates a lot of cooking area in the full open position to accommodate more. Plus, you can cook two different foods at the same time, without mixing flavors…beef burgers and vegetables, for instance. And it is a handsome appliance. Quite commercial looking, though on a rather small scale.

 

Cleanup up is EASY

 

The cleanup is so EASY. Really.

I use the wet paper towel and sponge for immediate cleanup.

The removable plates (which are very easy to remove and put back on) allow other options as well, such as washing in the sink or dishwasher.

 

The plates are nonstick, however, I find it is best to use vegetable spray or oil on

the food itself,

rather than spraying the plates.

 

There are 3 controls on the Cuisinart 5-in-1 Griddler — the griddle temperature selector, on/off to select either griddle or panini/grill, and panini/grill temperature selector. A cleaning and scraping tool is included for cleaning grill plates.

There’s no timer, so be mindful when you begin to cook with your new Griddler.

The Griddler really cooks quickly, so don’t overestimate the timing.

 

There is no difference between the top plate and the bottom plate. They have an identical shape, and are interchangeable. The release buttons activate a little spring-loaded mechanism that pops the plate loose – they’re easy to remove.

There’s a short electrical cord, about 34″ usable length. The construction is solid. The hinged
top settles squarely on top the food.

The Griddler lies flat. It has no slope like the Foreman and some other grills. This keeps vegetables from rolling off or rolling towards the front.

 

Only 5 minutes to preheat and then,

Wow,

Does it ever grill!

And it’s fast, too! So don’t go too far away!

 

I have yet to cook a big juicy burger on the grill, but so far, with pork chops, fish, chicken and vegetables – no splatter!

 

The grease catcher is built-into the Griddler as a drawer-like device, which can be taken out to clean, and then put back in place.

 

The Griddler cools down quickly when left open, good for cleaning, not so good when cooking. 😉

 

One of the most important factors for me was how hot the grill became, and how quickly.

 

Voila, perfect grilling on both sides.

 

I just love my Cuisinart Griddler.

 

Good investment, and most likely will be used frequently in ANY kitchen.

 

I know I’ll be using mine frequently. I’m on my way to make a grilled cheese sandwich right now.
