Ingredients:
2 – 3 carrots
2 – 3 celery stalks
1 – 2 medium onions – quartered
1 Bay leaf
1 bunch of parsley
1 tsp whole peppercorns
Roughly chop all the vegetables with a Chef’s knife and place in a large stock pot.
Add the herbs and 4-6 cups of water.
Bring to a boil on the stove.
Reduce heat, cover and simmer for 1 hour.
Cool, then strain with a collander into a separate container.
